SPANISH FOOD INFLUENCE

Leche Flan

About 80% of the dishes prepared in Filipino kitchen today can be traced to Spain. The Spaniards introduced tomatoes and garlic along with the technique of sautéing them with onions in olive oil. Add to that, as in popular baked good and desserts like Pan de Sal (a crusty dinner roll), Flan (an egg custard), Ensaymada (cheese buns), rice dishes as in Arroz Valenciana or Arroz Con Pollo, etc. Most Spanish recipes had been modified to accommodate what were readily available re ingredients. Thus, the emergence of a cuisine Filipinos called their own, adapted to their tastes.

One of the famous Spanish food that Filipinos are fond of eating is the dessert "leche flan". Because of its sweetness and creaminess, almost all crave for this.


Escabeche

This food is a widely known in Luzon as "Sarsyado". Escabeche refers to both dish of poached or fried fish that is marinated in an acidic mixture before serving, and to the marinade itself. In the Philippines, it is made up of tomatoes together with bagoong(fish sauce) or alamang.


PAELLA

It is a saffron rice dish combined with white fish, shrimps, squids and clams. Rice can be mixed with fish and meat (Mixed paella) or vegetables (Vegetarian paella). The name "paella" comes from the name of the special pan used for the cooking. It is mostly served in restaurants where rich families munch.
